The Sauvignon Blanc portion enjoys 4 hours of gentle skin contact before pressing, while the Semillon is pressed immediately after harvest to retain its natural brightness. Fermented entirely in large French oak barrels using wild, natural yeasts, the wine completes both natural malolactic and extended lees ageing, building the signature mid palate
